life hacks with lindt // part :: two


remember how lindt challenegd me to come up with a really creative recipe including some of their premium chocolate, and instead i cheated and hacked a shortcake recipe? well, guess what? i'm back this week with yet another baking hack that i think ticks all the boxes, as far as i'm concerned!...


more ingredients this time - i've gone and upped the ante, haven't i! here is what you will need to make the perfect strawberry and dark chocolate cheesecake...

what you'll need:
16 (or so) plain digestive biscuits
100g // lindt strawberry intense
150g // melted (unsalted) butter
400g // lighest cream cheese (watching my weight)
200g // double cream
1 cup // icing sugar
1 handful of strawberries

1 // crush all of the digestives and mix the melted butter through. layer the bottom of your tin with the biscuit base, ensuring all lumps are flattened and lovely and thick. pop in fridge for 30 mins.


2 // whip the cream in one mixing bowl, the cream cheese and icing sugar in another mixing bowl, and melt 3/4 of the chocolate in another. then mix them all together! make as much mess as possible while doing that, then pour that mixture onto the biscuit base and smooooth it all over. at this point you can either call it a day, and pop that bad boy in the fridge for a couple of hours, or, you can crush the remaining bit or chocolate over the top of the cheesecake and lovingly decorate it with the berries and then pop it in the fridge. you choose.

i strongly recommend the second option! decorate your cake! look at it! it's bloody perfection in a cake form!


and boy, does it taste good.
