i promised this recipe to laura weeks ago, but thankfully she seems to have forgotten, because we're still in regular contact. this is my easy peasy go to solution when boyfriend proposes spaghetti bolognese (i hate mince). it's simple and delicious.
2 chicken breasts
enough pasta for two
fresh chilli
2 cloves of garlic
spring onion
mushrooms
a tin of diced tomatoes
2 tablespoons of paste
mozzarella balls
fresh basil
olive oil, salt and pepper
how you'll do it:
1. put the pasta on to boil. 2. pop oil in the pan, throw in the minced garlic, chilli, mushrooms and spring onions - cook until you can smell them 3. dice the chicken and chuck this in too - brown it off 4. mix well, then empty the tin of tomatoes - stir well 5. add the tomato paste, until the sauce is thick and doesn't separate 6. drop the mozzarella balls in turn the heat down to allow to simmer, then sprinkle the cut up fresh basil on the top, add salt and pepper, and stir through again - turn the heat right down 7. when the pasta is done, strain and drain 8. serve!
